Kirsten's Pumpkin Pancake Recipe!

Yes, I took a few different recipes and made it mine :-) Using Tealightful's Cinnamon Chip Scone Mix :-)

Kirsten’s Pumpkin Pancakes

1 ½ cup Tealightful Cinnamon Chip Scone Mix
1 Egg
2 tablespoon melted sweet butter
1 teaspoon cinnamon
½ teaspoon ground ginger
1/8 teaspoon nutmeg
Pinch of ground cloves
1 cup buttermilk
6 heaping tablespoons canned pumpkin puree
½ cup Ghiradelli’s  bittersweet chocolate chips


Preheat a non-stick pan or griddle to medium-low heat and grease lightly. Whisk ingredients until batter is moist. Spoon 1/4 cup of batter into pan for each pancake. Turn each pancake when the edges are brown and cakes begin to bubble slightly. Flip and cook for one minute on the second side. Makes about 16 pancakes.
